Ham & Pimento Cheese w/apples, caramelized onions on Pretzel Roll








Pretzel Rolls
Yields 8

Ingredients:

2 & 3/4 Cups All-Purpose Flour
1 tsp. salt
1 T. Sugar
1 cup very warm water
1 package of yeast
1/4 Baking Soda

Directions:

Sprinkle yeast over water.
After five minutes, pour over flour, sugar and salt.

Stir til soft dough forms.

Turn out onto a floured board, knead for 6 mins, until you have a smooth elastic ball.



Spray a large bowl with non-stick spray, spray a piece of plastic wrap tuck around the ball.

Cover with kitchen towel.

Set on top of fridge or warm spot for 1 hr, until it has doubled.

Punch dough down, divide and roll into 8 balls.

Spray parchment paper, place on cookie sheet, and place balls on it, cover, let rise until double.

Heat oven to 425.
Boil a large pan of water, mix in 1/4 cup baking soda.

Place half rolls and boil on each side 20 seconds.

Drain on cookie rack.

Slit a cross mark on to each.

Bake 10 mins til deep brown.
To make sandwich:
Cut in half, and spread mustard(copycat mustard) on each half.

Spread caramelized onions on top of mustard bottom half top with 2 slices Deli Ham.

Place on cookie sheet.
Spread over mustard tops with pimento cheese.
Broil on low til Cheese melts.

Place apple slices on ham, top with cheese tops. Enjoy.

Barnyard Breakfast Mess

Our local place to go for a nice breakfast or brunch sadly was destroyed by a fire. Since they have yet to rebuild, to the dismay of my hungry husband and kids, this is my version of a dish that we're all craving. This is great for breakfast, but who wants to fuss in the am? I made this for dinner. Their portion was huge so this serves a bunch. Leftovers make a great breakfast burrito. They served this with sour dough toast(stay tuned for recipe). Hope you enjoy!

The Barnyard Mess
Serves 6 w/leftovers

  1. 4 large potatoes cubed, season to taste. Drizzle with olive oil, I used paprika, steak seasoning, dried parsley. Roast on cookie sheet about 35 mins at 350. This is done in morning, then they can hang out on top of oven until dinner.

 2. Chop up 1 onion, and 1 pack of fresh mushrooms.

3. Chop up 1 cup Ham, 5 pre-cooked sausage patties, and 5 slices of bacon.
4. Over medium heat, on large cast iron griddle or pan, saute bacon til almost done.

5. Add onions and mushrooms, potatoes and meats. Cook until nicely browned.


6. Scramble 6 eggs in another pan (I microwaved mine).

7. Add eggs to mix.

8. Top with 1 cup fresh grated sharp cheddar.


Now I seasoned my potatoes well early on, and left out salting anything because you wont need it with that meat. Enjoy!

Apple Dumplings




Apple Dumplings

Ingredients:
4 cups Flour
2 T. Sugar
1 tsp. salt

Whisk these together.

1 & 3/4 Cup Crisco
Cut this in til crumbly.

1/2 cup cold water
1 egg
1 T. white vinegar

Whisk these together, pour into crumb mix, stir til just combined. Will be wet. Cover and go peel and core 12-16 small apples(yielded 17 for me but my gala apples were small).

1 stick soft butter
1 T. Cinnamon
1 T. per apple

Mix this together. Stuff inside apples.

Golf Ball sized pieces of dough, flour well your rolling pin and board as needed. Roll each out working one apple at time. You want enough dough to cover apple. Smoosh it around, doesn't have to be perfect.

Set dumplings in large glass casserole dish while you make the sauce. You can bake these off at 350 degrees for an hour or until apple is soft on knife and serve sauce on top, or pour sauce over. Then bake.

1/2 stick butter
4 T. flour
Cook and whisk this for 1 min.
Add 2 cups Brown Sugar, whisk over med. heat, add 1 cup water, 1 cup apple cider, 1 T. lemon juice, 1/2 tsp cinnamon, watch and whisk til thick. Add 1 T. Vanilla, 1 T. Rum Extract. Save for later or pour over apples and bake.
You can skip this and use a caramel dip.
